What is royal jelly?

Royal jelly is the first food for bees. It is produced by young bees, whose duties include feeding the larvae and the queen. Only worker bee larvae receive royal jelly for only 3 days, and the uterus for a lifetime. That is why it lives much longer than ordinary bees - as many as 7 years, and worker bees only 35-40 days. But if the worker bee larva receives royal jelly for more than three days, it develops reproductive organs and becomes a queen. Such a situation arises if the queen dies in a bee colony and the bees urgently need to replace it.

Royal jelly is a jelly-like mass of a white or slightly creamy shade with a specific smell and a sharp sour taste. Only a few beekeepers collect royal jelly, as this process is very time-consuming. Therefore, it is not so easy to buy royal jelly and the price of this product is quite high.

The composition of royal jelly

The nutritional and biological value of royal jelly is much higher than that of all other beekeeping products. The content of lysine, proline, aspartic and glutamine amino acids in it is higher than in all types of animal proteins. For humans, these amino acids are very important, as they have a beneficial effect on the joints, increase cognitive abilities, have hepatoprotective properties and are indispensable for the functioning and development of the brain.

The amino acid lysine is necessary for the absorption of calcium by the body. Without it, it is impossible to produce collagen, which is responsible for the firmness and elasticity of the skin, vessel walls, and cartilage tissue. Also, lysine is involved in the synthesis of hormones, which is why royal jelly is essentially an elixir of youth.

Methods of conservation and storage

When deciding to buy royal jelly, you should understand that it has one drawback that must be taken into account - it loses its beneficial properties after two or three hours of storage at room temperature. For long-term storage, royal jelly is preserved in different ways:

  • freeze;
  • adsorb;
  • preserved with honey;
  • lyophilized.

Frozen royal jelly retains its properties, but it is inconvenient to transport. During adsorption, only 7-10% of royal jelly is added to lactose and glucose, which serve as adsorbents, and when preserving with honey, even less - 1-2 g per 100 g of honey. No more, otherwise the product will spoil.

One of the most convenient and effective methods of preservation is lyophilization . Pre-frozen biological preparations or food products after pre-freezing (at -30°C for 24 hours) are dried in a vacuum. Royal jelly began to be lyophilized back in the Soviet Union, as evidenced by the articles of apitherapists of that time. Freeze-dried royal jelly is not afraid of temperature fluctuations and can be stored without a refrigerator for two years (minimum), without losing its properties.
